Don't set the house on fire. I hear its pretty easy to do when frying the bird. They are delicious though.

a stupid salesman did that at last years x-mas party while frying a turkey on our steam-cleaning pad. BIG FIRE. fortunately our building is cinder block.

The trick to not spilling the oil is put the turkey in the pot and fill it with water till its just covering the turkey. Then make you a mark on the side of the pot and when it comes time to cook the turkey fill the oil up to the line on the side of the pot. This way you wont send hot oil out the top to catch fire on the open flame.

Yeah, I read that on a Turkey frying site. I googled Deep fried Turkey and couldn't believe how many sites their were. I'm going to try it, didn't realize it was that popular.

The way we measure what the right amount of oil to have in the pot is to first place the thawed bird in the pot then fill with oil to the mark.

Remove bird then heat the oil to temp, although a little messy I've found this to be the safest method for us.:sweet

If you use the water method make sure the bird is completely drained off of water as it can pop quite abit when dropping into 350 degree oil.

I just get the bird home and set it in the pot and fill it with water to the mark. Then I thaw the bird for a few days and marinate. A dry and thawed bird is certainly a must!
