temperatues while towing

Hi guys. I have recently bought a 26 foot nitrous hyperlite trailer. I am towing about 7500 lbs Loaded with my quad and with the 100 gallon water tank. Going up hills I seen my water temperature reach 215 degrees at about 60 miles a hour. Then it goes back to about 200 degrees on level areas of the highway. But I noticed the temperatures of my oil hit 230 degrees going uphill.(on my edge module and in level 2 tow ) Is this normal? ( My upgrades are listed below). I was also in tow/haul mode on my truck. Should I use the tow/haul mode on the truck at all times or only going up hills? Should I get a 203 degree thermastat? Any ideas, Its my first RV. My transmission and water temerature analog guages on the truck does not move though.

that's about what mine does and it doesn't get any warmer when I double the weight to 15k. keep it in tow/haul it just adjusts line pressure and delays your shifts reducing your converter slippage
