I would think it would be illegal not to have the side mirrors, anyway...

Unless things have changed as long as you have a rear view mirror you are good to go, no side mirrors required.

Trucks over 10,000 lbs, commercial vehicles, have to have both mirrors and at least one convex on the left hand mirror to be legal.
