Regardless of whether or not SOME 7.3s came with cats or not, yours came with one from the factory, and is now legally required to have one by every governing body that has anything to say about it in the entire continental united states. If you take it off, and they catch you, it could be a huge fine.

The way that they know is that the stickers under the hood call for a catalyst. If they say catalyst, and you don't have one, then you are probably going to get caught upon your next inspection.
