I've never heard of anyone converting a Superduty gasser to a 7.3. On the other hand, conversions to a Cummins is fairly common & popular. The 12 valve Cummins is a bit of a dinosaur, but it is about as rugged and reliable as diesel motors get.

There are several places around that deal with Cummins coversions. A couple examples are:

Fordcummins.com
Beans Diesel Cummins conversions

On Edit: I just saw you live in California. That being the case, and being how Cailfornia is with vehicle emmisions, you might be screwed.

I would look for another truck that has the diesel engine in it. You will almost never get it smogged. They have started to check the smog our trucks as of this month. Good Luck.
