What do I need to spray the undercoating on and what do I need to keep it off of?

The general idea of undercoating is to keep rust from attacking the underside of the body. You do not want to spray the running gear, tranny, or engine. I have never undercoated any of my Californian trucks, but we did when we lived in Wisconsin (before my driving time). Keep it off of anything you want to service or repair.
