beer cider enzymes

where do you get your yeast/enzymes, and how do you like them. im looking to get something with about 7% and i hate bitter taste.

i was thinking about trying to harvest from a bottle of store bought, but i havent tried it.....?

any tips or tricks would be appreciated!

Its going to depend on what yeast strain you use.
