It is a fuel delivery issue.
You last sentence about shooting fuel across the engine, that's technically how you bleed the lines.
You need to do a fuel pressure test. Read pressure at idle and under load.

Firstly you should read up on some of the common 6.0 "issues."
You will have to figure out where the coolant is disappearing. You should be able to look all over the engine for traces of a coolant leak.

I would look at the fuses. Specifically the one for the pcm/fuel heater. Fuel heater could have shorted, if so just unplug it.

Boot time? It's not like turning a phone on and off.

While it "can" be done, it takes a lot of work to put a pickup bed on a chassis cab truck. The frame is different. Morely made for flatbeds and service bodies.
